The Star Brisbane, positioned at the heart of the new Queen’s Wharf Brisbane precinct, will be Australia’s newest entertainment and leisure destination. Commencing a staged opening in 2024, The Star Brisbane will bring a range of unique entertainment options, world class hotels, dining, bars, luxury retail, gaming and a state-of-the-art Event Centre, transforming how people will play, shop and socialise in the river city.

A few of your responsibilities
- Tempura Mastery - Proficiency in preparing light, crispy, and perfectly battered tempura using a delicate balance of flour, water, and oil.
- Mastery of traditional Japanese knife techniques
- Proficiency in crafting various types of sushi, including nigiri, maki, and sashimi, with attention to detail and freshness of ingredients.
- Knowledge of traditional Japanese ingredients like dashi, miso, and mirin, as well as seasonal produce and seafood, is essential for creating authentic dishes.
- Ability to balance umami, sweetness, bitterness, and acidity to create harmonious flavors in dishes, adhering to the principles of Japanese cuisine.
- Skill in arranging dishes with artistic flair, using traditional Japanese tableware and techniques to enhance visual appeal.
- Innovation within the boundaries of traditional Japanese cuisine, experimenting with new techniques and ingredients while respecting the integrity of the cuisine's heritage.
What we will be looking for
- Premium Culinary experience with extensive Japanese culinary skills
- Demonstrated leadership skills
- High level communication skills
- Strong knowledge of food safety regulations
- Certificate 3 in Commercial Cookery (or equivalent qualification)

About us
The $3.6 billion Queen’s Wharf Brisbane development is being delivered by Destination Brisbane Consortium – a joint venture led by The Star Entertainment Group alongside its partners.
When complete, Queen’s Wharf Brisbane will deliver four new luxury hotels, more than 50 new food and beverage experiences, significant luxury retail, the restoration of nine heritage buildings and around 1,500 residential apartments.
